Guy Fieri ‘guilty pleasure’ taco, Jimboy’s, opens first O.C. restaurant on Sunday
Jimboy’s Tacos, a Northern California institution, is opening its first restaurant in Orange County this weekend.
Franchise operator Michael Freeman said he’s bringing JimBoy’s famous tacos — known for its grilled parmesan crusted shell — to Aliso Viejo. It opens Sunday in a former Jack in the Box at 27882 Aliso Creek Rd.
The quick-service taco eatery was founded in a camper trailer in 1954 at Kings Beach in North Lake Tahoe. The Folsom-based eatery operates about 40 locations, most of which are clustered in the Sacramento region.
Freeman said the parmesan crusted tacos filled with ground beef are the chain’s signature menu item. Food Network star Guy Fieri is scheduled to film a segment at a Northern California restaurant for a program chronicling “guilt pleasures” of celebrity chefs.
Jimboy’s menu also includes options for carnitas, shredded beef, steak and chicken.
Refried beans and rice are made in small batches in each restaurant, he added. The key difference between Jimboy’s and rivals? Freeman said restaurants grill their stone ground corn tortilla shells to make them crispy. Every taco is dusted with parmesan cheese. The menu also includes street tacos, burritos, nachos, and churros.
In Orange County, Freeman said JimBoy’s fans can expect a slightly tweaked menu, with additional options. Orange County’s Mood for Food worked with Freeman to expand the menu. Mood for Food owner Gina Galvan is the co-founder of the Chomp Chomp Nation food truck.
